Ingredients

  • 3 cups dates, pitted
  • ½ cup shredded coconut
  • 2 tablespoons almond butter
  • 3 tablespoons cocoa powder
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Add dates to a food processor and pulse until they are broken down.
  2. Combine the rest of the ingredients in a mixing bowl, then add the pureed dates.
  3. Mix until well incorporated, then roll into 12 individual balls.
  4. Place them next to each other on a parchment paper-lined sheet.
  5. Refrigerate for 1-2 hours until firm, then enjoy!

  • Try the use Medjool dates for this recipe! Figs or apricots also work.
