- 1 onion
- 1 garlic clove, chopped
- 3 dates, chopped
- 2 cups fresh baby spinach, chopped
- 1 tsp cumin
- 3-4 chicken breasts
- 1 1/2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper

2. Chop the onion into thin slices. Fry in a pan over medium-high heat for roughly 3-4 minutes in olive oil or your preferred cooking oil.
3. Add the chopped garlic and dates and fry for another minute.

4. Rinse and trim the chicken breasts on a cutting board. Take a sharp knife and cut horizontally with the tip of the knife to create an opening at the thickest part of the chicken. This pocket is where you will add the spinach mixture. Season with salt and pepper from all sides.
5. Fill the pocket in the chicken with the spinach stuffing.
6. Spread some honey on top of the chicken.
7. Place in a baking pan and cook for 20-30 minutes in the preheated oven until golden brown or until the internal temperature on the instant-read thermometer is 165° F (74° C). The cooking time depends on the thickness of the chicken breasts.
