These delicious Vegan Corn Fritters are a delightful treat. They are baked crisp on the outside and moist on the inside. They are made with organic sweet corn, gluten-free all purpose flour, spring onions, and lots of flavors!

Corn fritters are those things that can go well with anything, but when you serve them besides sauce or chutney, they taste even better. If you love crispy food or anything with corn, you will fall in love with these amazing fritters. They are very easy to prepare, and my family, especially kids, go crazy on them.

These corn fritters do not require much oil, so don’t worry about extra calories. Anyone can make these amazing beauties if they follow these instructions. I’ll share both baking and light frying methods below.

  • All-purpose gluten-free flour or rice flour: As a vegan, I have always preferred gluten-free flour to prepare my dishes. This flour is extremely healthy, and anyone can eat it without any worry.
  • Nutritional yeast flakes: It is rich in nutrients, helps to hold the fritters together, and gives a crispy texture.
  • Baking powder: It helps to add volume and lighten the texture of corn fritters.
  • Cumin: Adds flavors to the corn fritters.
  • Salt: To enhance the taste of ingredients!
  • Cayenne pepper: If you are sensitive to spicy, you can always go for fewer spice options like black pepper.
  • Water: ½ cup water is just what you need!
  • Garlic: It always gives amazing flavor to your dishes!

How To Bake Vegan Corn Fritters?

  • Preheat the oven to 425 degrees F. Line the baking sheet with oiled parchment paper.
  • Combine gluten-free flour, nutritional yeast flakes, baking powder, cumin, salt, and cayenne in a large bowl.
  • Stir in water (to form a thick batter like a pancake batter), spring onion, garlic, and corn.
  • Mix well and drop on prepared baking sheets. Brush or spray with oil. Bake for 30 minutes. Turning halfway!

How To Lightly Fry Vegan Corn Fritters

  • Combine gluten-free flour, nutritional yeast flakes, baking powder, cumin, salt, and cayenne in a large bowl.
  • Stir in water (to form a thick batter like a pancake batter), spring onion, garlic, and corn.
  • Heat oil in a large skillet over medium-high heat, add 2 tablespoons spoonful of the batter to the skillet. Spread the batter into a round circle and cook for about 3 minutes. Flip the corn fritters and cook for another 3 minutes or until golden brown.
  • Transfer the corn fritters to a plate that is lined with a paper towel and repeat cooking the remaining batter until the batter is used up. Add extra oil as needed.

Why Do My Corn Fritters Fall Apart?

Mostly corn fritters fall apart if it’s stuck to the frying pan or baking sheet. Make sure you use enough oil and don’t flip too much. When you are cooking the fritter, avoid high flame or temperature and always cook at medium to low or medium heat settings.

Why Are My Corn Fritters Soggy?

The most common issue for soggy corn fritters is using too much batter and using too much water while cooking. So here are some simple tips and tricks to prepare crispy corn fritters,

  • Use fresh corn as they are drier. But if you don’t have available fresh corns, make sure you drain the frozen and canned ones well.
  • Use little batter as possible to hold the corn. More batter means less crispy fritters.

How to Store and Freeze Corn Fritters?

  • Keep the leftover corn fritter in the refrigerator for at least 3 to 4 days. You can enjoy them cold with some maple syrup on top or reheat them in the microwave or oven.
  • You can completely freeze the corn fritters. To do that, let them cool completely before packing them in the air-tight container or sealed bag. It is ideal to use wax paper between each of the corn fritters to prevent them from sticking. The corn fritter will stay good for at least 4 to 5 months.

Can I Reheat the Corn Fritters?

To reheat the corn fritters, put them in the baking sheet lined with parchment paper and start baking them at 400 °F (200 °C) for 10-15 minutes or until they are completely warm. Keep an eye on them when they are baking as you do not want them to be overcooked.

Moreover, you can reheat them in the air fryer too! Simply put them in the basket and start cooking at 390 °F for 5-8 minutes or until they are crispy enough.

Serving Suggestions

You can enjoy the dish as an appetizer, side meal, or even breakfast! They are full of flavors that you can eat as it is or dunk them in the dipping sauce.

I have prepared my favorite cheese sauce and green onion dip for these. You can also have ranch dip, vegan sour cream, salsa, guacamole, hummus dip, gravy, or drizzle some maple syrup on top of them!

Can I Fry Them on Stovetop?

To prepare the corn fritters on the stovetop, get a large non-stick skillet over medium temperature for 2 minutes. When the skillet or nonstick pan is hot, add some oil. Take a large scoop of about 3 tbsp of batter and pour it into the pan. Gently press the batter to spread evenly. Cook the fritters for 2 to 4 minutes or until they are cooked and turn golden brown.

Tips and Tricks to Prepare Corn Fritters

  • Avoid serving the corn fritters cold as they lose their crispy texture and become soggy. So, you can serve them as starters before serving the main meal or as a snack, whatever you prefer.
  • Before you fry the corn fritters, make sure you prepare chutney or dipping sauce before. Generally, most of us make this mistake, making our fritters soggy and cold.
  • When you are making the batter, make sure you use cold water. It will make the fritters crispy as they will not absorb that much oil, keeping them light and crispy.

    I tried this recipe as written, but fried the first batch. However, it was just too much corn kernels for my liking (I don’t eat corn much). So the next day I tried again with some variations. I pureed 3/4 of the corn with enough water for it to blend which left a remaining 1/4 of whole kernels for the fritters. I also doubled the seasonings, added chopped cilantro, and baked the second batch as mentioned in the recipe. I loved the second attempt!! I served them with a sauce using plain Greek yogurt (I’m pescatarian not vegan) seasoned with taco seasoning. The only thing I’ll change next time is reduce the cooking time from 30 minutes by just a few minutes. Thanks again, Michelle!

      Once I mixed in the pureed corn and other ingredients, I added enough water to the batter to get the correct consistency as suggested in the recipe (thick pancake batter).
