Why you’ll love homemade cranberry sauce:

There’s so much to love about this cranberry sauce recipe.

  • Flavor: Not overly sweet with a hint of orange, this sauce has a perfect balance of sweet and tart!
  • Difficulty: Super easy, one pot recipe that requires only 15 minutes!!
  • Make-ahead: This sauce freezes great, which makes it a perfect make-ahead Thanksgiving side dish.

Key Ingredient Notes:

  • Cranberries – Both fresh or frozen will work for this recipe. You don’t need to thaw frozen ones.
  • Sugar balances out the tartness. You may reduce the sugar amount slightly, but as written, the sauce isn’t overly sweet.
  • Orange zest adds such a delicious flavor to the sauce! Make sure to zest only the orange part and avoid the bitter white pith.
  • Orange liquor amplifies the zesty flavor. I use Grand Marnier, but any orange liquor would work fine.

How to make this recipe:

  • In a medium saucepan, combine all the ingredients except for orange liquor. Bring it to a boil
  • Simmer the mixture over medium heat, stirring occasionally, for about 10 minutes. The sauce should be slightly thickened, but still runny. It’ll thicken more as it cools.
  • Remove from heat and discard cinnamon stick.
  • Stir in orange liqueur. Cool completely and serve.

Why I don’t use orange juice in this recipe?

Sure, you can substitute orange juice for water, but I’d decrease the sugar amount. Otherwise, it’ll be too sweet.

But the real reason I don’t use orange juice is that I like to keep it simple. I don’t usually buy orange juice to drink, and I sure don’t want to mess with squeezing oranges during this already busy season. That’s it, plain and simple! 😉 And this orange cranberry sauce is plenty zesty without it!

How to make cranberry sauce in Instant Pot:

It’s so easy and quick to make cranberry sauce in Instant Pot.

  1. Put all the ingredients, except orange liquor, in inner pot of Instant Pot. Note: we’re using only 1/2 cup of water.
  2. Set it for 1 minute on high pressure. Let the pot release the pressure naturally.
  3. Then set the pot to sauté and cook for about 5 minutes to thicken. That’s it!!!

I’ll include detailed instructions in the recipe card below.

Ingredients

  • 1 bag (12oz/340g) cranberries washed Note 1
  • 1 cup (240ml) water Note 2
  • 1 cup (200g) granulated sugar
  • 1 tablespoon orange zest
  • 1 cinnamon stick
  • ¼ teaspoon table salt
  • 2 tablespoons orange liquor such as Grand Marnier

Instructions

Stovetop method:

  • In a medium saucepan, combine cranberries, water, sugar, orange zest, cinnamon stick and salt.

  • Simmer the mixture over medium heat, stirring occasionally, for about 10 minutes. The sauce should be slightly thickened, but still runny. It’ll thicken more as it cools.

  • Remove from heat and discard cinnamon stick.

  • Stir in orange liqueur.

  • Cool completely and serve.

Instant Pot method:

  • To make it in Instant Pot:Put all the ingredients, except for orange liquor, in inner pot of Instant Pot. (Note: only add ½ cup of water.)

  • Set the Instant Pot to Manual/Pressure Cook for 1minute on High. (It took about 8 minutes for my IP to come to pressure.)

  • Once the time is up, allow the pressure to release naturally for 10 minutes, which means you don’t need to do anything. Then carefully turn the valve to venting. Once the pin drops, carefully open the lid.

  • Hit “cancel” button, and then select “sauté” function. Stir in orange liqueur and cook the sauce for about 5 minutes, stirring frequently, until thickened. Transfer into a jar and cool completely.

Tips & Notes

Note 1: If using frozen cranberries, no need to thaw it.

Note 2: For Instant Pot method, only use ½ cup of water.

Make-Ahead Tip: The cranberry sauce can be refrigerated for up to 5 days, or frozen for up to 3 months. Store in an airtight container. Bring it to room temperature before serving (about 30 minutes on the counter), or heat it on the stove or in microwave. To thaw frozen cranberry sauce, transfer into the fridge overnight.

  1. Orange Cranberry Sauce Recipe (15)
I just love cranberry sauce–all year long. This year my Insta Pot made it so fuss free. To one bag of cranberries I add a half cup of sweet red wine and whatever orange juice is called for. No water. I use brown sugar instead of white. I ladle it into small refrigerator containers. I keeps very well for a year in my refrigerator.

FAQs

Why is my homemade cranberry sauce not thickening? ›

One possibility is that you may not have used enough sugar: Sugar helps the sauce firm up, so be sure to use the full amount called for in a recipe. Another possibility is that the cranberries need to boil for longer, releasing their pectin and ensuring a jelly consistency.

What if I add too much water to cranberry sauce? ›

What to do if the cranberry sauce is too thin or loose. If you inadvertently added too much water, simply bring the cranberry sauce back to the stove top and bring it to a low boil, cooking it down just a bit to help thicken it up.

How to jazz up cranberry sauce? ›

Adding a teaspoon or two of fresh lemon or orange zest, a tablespoon of chopped candied peel, or even a splash of juice to your canned sauce will brighten flavors and bring in some homemade flavor.

How long does orange cranberry sauce last? ›

You can make cranberry-orange sauce ahead and take a little pressure off the biggest cooking day of the year! Homemade orange-cranberry sauce will keep well covered and refrigerated for 10-14 days.

What to do when cranberry sauce doesn t set? ›

Does homemade cranberry sauce thicken when it cools? ›

Serve warm, room temperature, or chilled. Cranberry sauce will thicken as it cools.

Why is my cranberry sauce upside down? ›

But why? Ocean Spray says this is to get the cranberry sauce out in one intact piece. “The rounded part of the can that looks like the bottom has an air bubble in it,” Ocean Spray's representative explains. The bubble is there so you can “break the seal the sauce makes with the can.”

What makes cranberries thicken? ›

When the cranberries are heated, the berries begin to break down and pop open. The pectin is then released and reacts with the sugar and juices to form long polymers and thicken the sauce. This process creates the cranberry sauces and jellies which are so familiar at holiday dinners.

Are you supposed to heat up cranberry sauce? ›

It's perfectly fine to serve up cranberry sauce — whole berry or jelled — straight out of the can. But in my experience, heating the canned sauce up takes its flavor to the next level. Plus, it becomes a little more aesthetically pleasing.

What thickens cranberry sauce? ›

The sugar in the syrup helps the mixture thicken. It could also be because you haven't cooked the mixture long enough. The cranberries need to cook long enough to burst so that they release plenty of pectin which is a thickener naturally found in cranberries.

Is canned cranberry sauce better than homemade? ›

While there are some editors who prefer homemade cranberry sauce, the canned variety also has quite a following. "There's something so beautifully perfect about the texture of canned cranberry sauce, and none of those homemade mess will ever compete," says Senior Digital Food Editor Kimberly Holland.

Should cranberry sauce be served hot or cold? ›

Is cranberry sauce supposed to be hot or cold? Either! Some prefer to have it served fresh and warm, straight out of the pot, while others need it completely cooled down to enjoy the flavours. Personally, we prefer cooled sauce.

Can you freeze cranberry orange sauce? ›

Yes, when stored properly, you can freeze leftover homemade cranberry sauce. Before freezing, keep three important principles in mind: cool it, wrap it and label it (the same rules apply when freezing homemade meals). First, it's important that any cooked food has cooled down before it goes into the freezer.

Does orange sauce go bad? ›

Homemade orange sauce, if properly refrigerated, can last for about a week, and if frozen, up to a month.

How do you know when cranberry sauce is done? ›

Pull the sauce off the stove once you hear or see the first few cranberries burst. You want some of them to burst but others to remain whole for the best texture.

How do you fix sauce that is not thickening? ›

For a too-thin sauce, try adding a slurry (equal parts flour and water, whisked together) or beurre manie (equal parts softened butter and flour, kneaded together to form a paste)—both are ideal thickeners for rich and creamy sauces, such as steak sauce recipes.

How do you thicken a sauce that's too watery? ›
